Keyboard problems

I just added a Japanese keyboard onto my mac, but I can't figure out how to set it up so that I can input romaji and it'll automatically convert the text.

The Japanese keyboard layout (hiragana) on my new MacBook Pro is like this: On my old computer (and other computers I've used), when selecting hiragana the layout would be QWERTY and what was typed would be converted to hiragana, etc. Does anyone know how to change this? Can you change the Japanese keyboard typing method to romaji in Big Sur? Is this possible? The option is there on older operating systems as shown below: However, it is not there on Big Sur: I'm trying to type in Japanese on my Macbook but the typing method is set to `kana' (I cannot see any option to change it) and this seems pretty unusable since I don't have kana symbols on my keyboard. Everything works fine on my i-Mac which is has an older operating system and I can just use the romaji method. Is there a way to use the romaji method on my Macbook without installing an older OS?

Azerty keyboard switch to qwerty when writing in Japanese and when logging in. Hi, I have bought a new iMac in Japan and it is working with macOS Big Sur. It was delivered with a Qwerty keyboard but I am using the AZERTY keyboard from my previous Mac because I am French speaking. I have changed the languages in the settings (keyboard) and it works in AZERTY properly when I write in French. However, when I type in in Japanese, it automatically switches to QWERTY which is very annoying. Moreover, when I turn the computer on, I need to enter the password in qwerty mode. From second time on, it is requested in azerty. I don't understand why those switches between AZERTY and QWERTY happen. Any idea? Thank you very much!
