Hi there. Fish out of water here. I'm currently signed up to giffgaff but unfortunately the particular iPhone I'm after is out of stock on their website. Can I get one via the apple website and still use my giffgaff simcard or would it complicate the contract?

It appears GiffGaff is a Virtual Network Operator (VNO) who uses O2's network. I'm guessing you're in the UK? If you are, check with GiffGaff before you purchase from Apple directly.
I have no clue what giffgaff is, but Apple’s phones in the US come with sim cards for any one of the major carriers or you can get one that is unlocked. I just picked a model to show:
