Why can't I add a cellular plan to my iPhone X?
No. It's physically impossible. The iPhone X is not a dual SIM device.
The iPhone XS contains a SIM Slot and an eSIM. The X does not.

I could not try it because I did not find the add button that is available on my cell phone, but it was not available as I found it.

The iPhone X does not contain an e-SIM. You can't "add a cellular plan".
