Apple ID entry can't connect to server after Apple Watch series 3 upgrade to 7.4.1

I updated my Apple Watch series 3 to 7.4.1 and it's asking me to Update Apple ID Settings and sign in. Every time I login into my Apple ID I get the message "Could Not Sign In. There was a problem connecting to the server." iPhone reboot did not work. I also tried turning iMessage off - didn't work. Any suggestions?

This started after I upgraded iPhone to 14.5.1 and it said I needed to update my Apple Watch. It took many attempts just to get 7.4.1 to install.

I unpaired my watch this morning and repaired it from the backup made with the 7.4.1 OS and it all worked fine. Problem solved. Previously when I upgraded to 7.4.1 it restored from a backup made under OS 6. Not sure if that was the root issue. Just glad it works now.
