Three visual voicemail
It's probably been done to death, so apologies if so, but is it correct that Three doesn't support visual voicemail?

I do not know what "Three" is.
Voice Mail (Visual or Normal) all are Carrier Specific features. Contact your Carrier (Cellular Service Provider), the agency that issued the SIM / eSIM to you.
