Is MacBook Air configured with 8 core CPU 8 core GPU 512 GB storage and 16GB RAM available for in-store purchase? Currently, when looking online, the Apple web site says in-store pick-up for this configuration is not available. I'm accustomed to Apple stores having stock for all configurations.

Some other 3rd party vendors will stock "custom" configurations
but not many. B&H Photo comes to mind. I have never bought a
computer from them but I have purchased other items and they
have been pretty decent in product delivery and quality. There may
be a few others.
BTW, B&H is an authorized Apple dealer.

Also, I checked and they have a few 16GB M1 MacBook Airs
in a couple different drive configurations including 16GB/2TB
in stock.
That is exactly the case, at present, if you want the configuration the way you have listed. I cannot tell you why that is the case however it is what it is at this point.
