I have been using apple mail for some time but I find it quite annoying that the preview of attachments is displayed one moment it is an attachment and the next it is a preview again, this is sometimes very mixed up. How can I turn this off or change that apple mail only shows my attachments as a symbol and not as a complete preview?

It will always show a one page attachment. There is no way to disable that, now. If it is more than a page, then it is shown as an icon. You can ctrl-click on an item and toggle between show as icon and show in place, but that doesn't stick.
I've never seen them switch back and forth.
