Just installed Big Sur. The column layout for Mail does not have a column to show which mail is flagged. How do I add a column for flags. In my previous MacOS I had a flag column next to the read/unread column.

Control-click on the horizontal region containing "From", "Subject", etc. In the resulting contextual menu, select the desired column headings, e.g., Flags.
