It may not seem obvious but it does address removing a phone from an existing account. Once you follow the procedure in:
What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support
the iPhone will be removed from your account and your son can then setup that iPhone as though it were brand new.
It will have no effect on your other iPhone.
The answer does not address removing a phone from an existing account. Both phones are still in use.
