Did you follow all the steps in the article "If you need help with CarPlay"? Make sure to follow all 7 steps in order if you haven't had the chance to try them all.
If this continues, test if it occurs with multiple apps and follow the steps for How to contact an app developer. For example, you can test to see if the same behavior occurs with the Music app. If it doesn't, this may be related to specific apps.
Additionally, if your iPhone is connected to CarPlay using Bluetooth, we'd recommend testing to see if this occurs with other Bluetooth devices if you're unable to test using USB on your vehicle.
When you've tried everything we've gone over, then it's time to Contact Apple Support.
