iPhone 12 Pro how do I permanently turn off night mode?

Hi do I permanently disable night mode?

The instructions in other discussions say use 'preserve settings' in the Camera settings. I have all the preserve settings on, however night mode resets and goes back to auto every time I go back into the camera and is making me mess up low light shots as it seems to activate when even looking at something dark.
