how do i restore deleted messages without doing a total restore

If you use messages in iCloud (Use Messages in iCloud - Apple Support), deletions are permanent and unrecoverable. If you don’t use messages in iCloud, a full restore of your iCloud backup may restore the messages, but only if that available iCloud backup has not been over-written with a more recent one which would reflect the deletions, and thus no longer have those messages in it (iCloud backups are incremental, not archival).
