Error code EDS0057 - why am I still paying for service I can’t get on my watch?!

As I’m doing my due diligence here and researching, it isn’t looking promising as far as resolutions….so if I’ve missed something and anyone has resolved the issue of connecting their Apple Watch to iPhone/using cellular service, I will be so grateful and relieved. I’ve updated. Restarted. Cleared caches and made storage room and paid the bill…etc etc…..

but I still can’t just do what I got the watch for in the first place. Everything I’ve read so far has no solutions offered since 2018…that can’t be right, can it?🤷‍♀️🤦‍♀️🤦‍♀️ If it can’t be fixed it should be charged. Am I wrong? Just want a small amount of progress and I’d feel better but this standstill is too much for how much it all costs…please help!

To use your Apple Watch Series 3 or later with watchOS 7, you need to pair your Apple Watch with an iPhone 6s or later with iOS 14 or later. Setup assistants on your iPhone and Apple Watch work together to help you pair and set up your Apple Watch.

To use your Apple Watch Series 1 or later with watchOS 6.2, you need to pair your Apple Watch with an iPhone 6s or later with iOS 13 or later. Setup assistants on your iPhone and Apple Watch work together to help you pair and set up your Apple Watch.

To use your Apple Watch Series 1 or later with watchOS 5, you need to pair it with an iPhone 5s or later with iOS 12 or later—Apple Watch models with cellular require an iPhone 6 or later. Setup assistants on your iPhone and Apple Watch work together to help you pair and set up your Apple Watch.
