TVOS 14.5 Update breaks HDMI audio extractor for projector cart.

I use an Apple TV 4th generation to play content on a projector for outdoor movies in our backyard and sometimes in the living room. The setup is on a cart and I use an HDMI audio extractor (JTech Digital JTDAT5CH to get an optical signal that sends to my powered klipsch speakers. If not familiar, this takes an HDMI input signal, splits the audio to an optical or rca (white-red-yellow) output sources and passes the video on to the projector and the audio to the speakers. This setup has worked great for about 2 years with a wide variety of streaming services.
When TVOS 14.5 came out, the video still works but the audio is lost. I have tested cables for HDMI, optical and older rca, cables, settings on the powered speakers, all connections and no success. I know optical connections can be troublesome, but they are seated correctly. I have tried all of the different audio settings in the Apple TV and no luck. I even checked all settings on the extractor (2Ch, 5CH, Pass). It is normally 2 channel as I only have a 2.1 setup for outside. We had it setup in the living the day of the update and after the auto update, it no longer worked.
Has anyone else had an experience like this? Did the TV OS update remove this type of connection? I can pair up HomePods and they work fine, but they are woefully underpowered for backyard viewing. Ideas?? Thank you.
