I am guessing from the "last stopped kext at 1077916893812: >IOPlatformPluginLegacy" that you have a component or extension from old software that is causing these kernel panics.
If your Mac spontaneously restarts or displays a message that it restarted or shut down because of a problem, click here --> https://support.apple.com/HT200553
You can try running in Safe Mode for a while but Safe Mode really disables a lot and it may try your patience unless you figure it is no worse than the frequency of the panics you're experiencing.

This Problems occur in connection with Big Sur. So I hope this will be fixed in future releases.
You can try to reset SMC at first. I hope this will solve your problem.

I agree with @limnos that there may be a legacy extension that might be causing it.
When is your Mac restarting? While you're using it, or when in sleep mode/overnight when you're not using it? It would help to get an idea if there is a pattern. If it is restarting while you're using it, is there anything observable going on when that happens?
By any chance, do you have any problems with the power going to your Mac? Do you experience brownouts? Example would be if your Mac shares the same power circuit as say a microwave oven, your Mac could be experiencing a drop in voltage, causing it to shut down, and/or restart. I always have my Mac connected to a UPS (uninterruptible power supply) with a battery so that there's always "clean" power. A lot of problem can be attributed to "dirty" power. Something to think about.
What year/model Mac do you have?
Do you have any external peripherals? If so, disconnect them all. Does the problem continue?

It happens at different times and I can't find rhyme or reason - yet
I had the same feeling re legacy extensions, so I'm going to try removing a few things and cleaning some things up!
I'd hoped that the text would pinpoint something so I'm not feeling around in the dark as much!

If your Mac was fine with 96GB for a while, then you're most likely okay. We've had lots of discussions over the past few months with RAM upgrades on new iMacs causing lots of problems. My iMac was such a victim, and RAM tests were fine too.
If you have had issues with your Mac AFTER doing the RAM upgrade, consider removing the RAM cards and stick with the original OEM RAM and see if that resolves your problem. Again, if you've had it for a while with no problems, then no need to check.
OK, thanks, I'll keep that in mind. It always struck me that after upgrading the RM I don't actually know if a saw a difference, but that was some time ago!

Have you made any system changes before the problem started? I noticed you have 96GB RAM. Have you installed additional RAM recently?
That RAM's been in there for some time. Are you suggesting that could have something to do with it? I've had that in the back of my mind, but's not coming up as an issue in any hardware test?
Hynix (and Micron) are both OEM suppliers to Apple, so you're probably okay. OWC has had a lot of problems with bad RAM. You should be fine.
