You're very welcome. We understand you've already worked with Apple Support, and that this specific issue wasn't able to be resolved at that time. We also understand the Remote app worked after the most recent updates for the first day.
If you've not unpaired and erased your Apple Watch since the most recent macOS and watchOS updates, this would be a great place to start to see if you can use the Remote app as expected.
If the Remote app still isn't working as expected, the next step is to Contact Apple Support for additional troubleshooting.

We understand you're unable to connect to your music library on your Mac mini using the Remote app on your Apple Watch.
If you're trying to Use Apple Watch to control music con a Mac or PC, your Apple Watch and Mac mini need to be on the same Wi-Fi network.
To add a music library, please open the Remote app on your Apple Watch > Tap Add Device > Open Apple Music on your Mac mini and select your device from the list of devices shown with your library > Enter the 4-digit code displayed on your Apple Watch. If you're unable to complete any of these steps, please let us know what happens when you try to do so.
We'd also recommend making sure your Mac mini and Apple Watch are up to date. If an update is needed, please be sure to create a Time Machine backup prior to updating. These links can help:
If you continue to get the same error or alert when trying to add a music library, please let us know if you're able to Use Now Playing on Apple Watch.
If you're unable to use Now Playing, please let us know what happens when you try to control audio playback on your Apple Watch.

Have you tried to Unpair and erase your Apple Watch?
If not, and you're using the latest version of macOS and watchOS, please unpair and erase your Apple Watch, then Set up your Apple Watch again.

Long story. After several hours (?) with Apple support I gave up trying to use the <remote> app with my Mac mini music library.
It’s never worked. All software is up to date. The wifi network is the same. The <pairing> is good. But I still cannot start/stop/pause etc. or even see what’s playing via the app. All works perfectly on my phone by the way.
Then a couple of weeks ago with the latest round of updates miracle of miracles it started to work - but only for the first day. After that nothing, back to the old regime.
I was curious because I could not find any reference to others in the community with the same problem. So I posted. Thanks for your response. It’s doubly frustrating because <Spotify> App works, automatically appearing on my watch when I’m playing music. And so does <BBC sounds> but not <Remote> except for that one and only day.

As I mentioned I spent rather a lot of time with Apple support before I gave up. During those sessions I did indeed erase and unpair the watch and launched the whole process again. I even created a "test" user profile with its own mini library but nothing worked.
After the recent updates (a couple of weeks ago?) it worked for the first day but not after. Are you suggesting I should go through the whole process again and wipe my watch and start again?

Well, it works but only for one session at a time then I have to "reboot" the watch in order to connect again. 😅🤪
