My iMac (late 2014, running MacOS 11.1) is asking me for ALL of my passwords to ALL of my Apple devices when I follow the dialogue boxes for signing in to my Apple ID. Why?? Should I do this or is this some type of malware?

As long as it is asking you in the System Preferences app, there is no issues. It asks for those for verification.

I get that also when I reboot into my internal boot drive after booting from an external SSD. As Jack-19 mentioned it's all done within the System Preferences.
I checked this out. Message did come from preferences. So why is iCloud now downloading 74.99 GB of to a folder named iCloud Archive on my computer?
Some account services will not be available until you sign in again.
