I have selected the classic screen saver option. I have chosen to show the screen saver after 2 minutes.
I have selected a folder from my photos which contains 81 shots. I have the option 'shuffle slide order' selected. There is no option for speed of display using the classic option.
When the screen saver starts it only displays 1 photo and does not cycle through the 81 available (it used to).

That's definitely interesting that it works on some options but not others. It may be worth creating a new user and testing it in the new user account. Be sure that it's a new administrator account and that you're able to give it access to that folder of photos. This would help isolate the issue to one account or the operating system at large.

To start, can you make sure that you have the latest version of macOS installed? Here's how to do that: How to update the software on your Mac. Once you're up to date, go ahead and set that screen saver up again from scratch and see if you're able to have it shuffle your photos as expected.
If you're still stuck after that, can you try using one of the default collections instead of a custom folder and see if that works? That will be a good way to test and isolate the issue.

The latest version of macOS was already installed Big Sur 11.3.1
I tried to set up the screen saver again using the 'classic' option. The photos still not display.
Changed the option to 'Ken Burns' and it works and the screen saver cycles through the photos.
