My boyfriend order me a apple watch SE today on a contract with EE as his iphone with EE but my phone is with 02 would I be able to use this as it a gift he’s brought me

The cellular watch and the phone have to be with the same network provider,if you're with O2 then the watch will function as a GPS only watch unless you take out a cellular plan with O2.

You could always ask O2 if this is possible,a couple of other options;
Swap your phone with your boyfriend.
Cancel O2 and join EE.
Return the watch and buy one from O2.

Yes it just means to make calls and send texts you will have to have your phone with you.
