The iPad has started to heat a lot while using certain apps (especially notability), this is not always the case.

Some Apps are known to be CPU intensive - therefore causing the iPad to become quite warm. Note, however, that whilst becoming warm is expected, the iPad should never become uncomfortably hot to hold.
Assuming that the unexpected warming is consistently noted with a few specific Apps, this would suggest that the iPad itself is otherwise healthy. Reaching out to the respective App Developer may be helpful with troubleshooting:

So: what specifically is the issue? iPad got warm? It didn’t shut down, did it? If it burned you, stop using it (except to complete one last backup).
Device warmth, particularly near the iPad’s CPU and battery, is probably correlated with CPU intensive apps, like Notability as well as graphically intense games.
It may be more pronounced after the latest upgrade (1) coincidentally, as it rebuilds caches etc., and (2) systemically, because the latest OS is always doing more in the background.
Experiment with reviewing Settings —> General —> Background App Refresh and turning off apps you don’t think need (or deserve) background processing.
Review battery health: if your battery is dying, it will require more energy to charge, and convert (some of) the difference directly to heat, both while charging and while discharging.
Also, as the battery dies, you’ll plug in more often, and charging while using intense apps puts yet *more* strain on the system.
When the correlation feels strong to you, replace the battery or replace the iPad.
As a first step, a forced-restart of your iPad may be helpful - as doing so will often resolve an isolated software or performance issue:

Contact the Developer:
Use the contact information found on the app's site of the App Store. Report this bug to them. They probably have yet to do their part in fixing this.
