Can't one do backups, etc. in iTunes into a storage drive rather than /C?

There used to be certain things you could do with symbolic links but iTunes has been getting less tolerant of those. You may have to end up moving things back and forth by hand as the situation dictates it.
Thanks for answering. It seems flat out obstinate to make it so opaque, insisting that iOS backups go blindly into the C drive on a PC, but maybe it's too much trouble to do otherwise.
