In last 3 updates, the process is finished successfully but some application stop to work.
For each update is a new app stop to work and only work after unpair-pair.
Now I'm using the last version available (7.4.1 -18T201)
I asked to Apple Support but the solution was: unpair and pair.
Someone have some tips about it?

Well that should actually still work fine. I just tried Spotify and could control playback, using both the iPhone or watch as the source.
Try reinstalling the app, does that helps?
Which apps in particular - are they from third party perhaps? It would be odd that S6 has any troubles like that.

So, I'll unpair, again, and hope Apple solve that.
Why I believe it's Apple's issue?
Because the aleatory app that not work show as "Available Apps" (In Watch App) and I can't install, i click on Install button but nothing happen, no error, no alerts, just nothing (at this time some Appple native apps has this behavior).
Yes, they are third party app. Each time a different app stop to work, this turn is Spotify :(
