transferring old iPhone to new iPhone

I have been trying to transfer my old iPhone to my new iPhone and for the last 2 hours on my old phone it says waiting for software update and on my new phone I hit install software update and it has been on the same screen for 2 hours. I dont want to hit the x on my old phone because if I do it says are you sure you want to exit set up and I dont know how to start the new setup again if I do that
