Does apple tv 4k 2021 support True-HD and DTS-HD audio formats ? Any updates ? Because the previous one doesn’t.

No. Apple TV 4K (2nd generation) - Technical Specifications - Apple

Why pay licensing fees per unit, when none of the streaming content providers use those formats.
