How do I download podcasts as MP3s so I can watch them on a separate MP3 player?

The format of the file isn't the problem, apparently it's Big Sur's refusal to let you copy it out of the Podcasts App.
Ah - the Apple Ecosystem Lockdown tightens. Sealed System Image of Big Sur and now Podcast Lockdown. At least we are Safer now ! Tongue in cheek ;-))
Right Click exists in Catalina and Big Sur on both my Ancient iMac Late 2012 Catalina and Newest MBA M1 Big Sur 11.4 - guess you just have not experienced it or found it - yet

Can't find any "Library" folder.
Copy the path, while in the Finder, press Command Shift G, paste in the path, click Go.
Welcome. You can add it to Notes. Ctrl-click on the Cache folder, select Share > Notes.

.... but Apple I guess won't let me copy that path -- my Finder freezes every time I try to share it in a Note.
It's not "Apple". Works fine for me.
Can't tell you why it's not working for you.
FWIW, you can always copy the path and paste it directly into Notes. You would have to copy it to "Go to Folder…" each time of course.

Do you really need it in a Note? You cold leave it on the Desktop, or put it anywhere out of the way and drag it to the Doclk.
