If I don't have the original cable from my iphone 11 pro max and I see the Restore screen what can I do abut it?

You can try using another cable if you don't have a replacement of the original to-hand. I have several and they all seem to transmit data okay though that is the main concern when using inexpensive cables that were designed primarily for recharging.
