both are bluetooth so yes wireless they are

Yes. Apple doesn't offer wired, USB mice anymore.

Yes, new M1 iMac has matching colored wireless (Bluetooth) Magic Mouse and Keyboard.

Standard is the shorter keyboard, the extended one shown in mine was a $80 upgrade:
