Looking to buy the Mac Mini M1 with 16gb RAM in the UK, but can't seem to find an official retailer that stocks it, only the 8gb model with variants in HDD space.
Am I just being blind?
I've tried Apple, Amazon, Curry's, etc. A site called 'Jigsaw24' is the only site I've found that has it but I've not heard of them before and am worried about getting a unofficially upgraded one.

Very few retailers will stock special order Macs and stick with
Apple's "off the shelf" models, including Apple.
Your only option may be ordering one from Apple or if
Apple offers their refurb units in the UK or EU, you may find
one pop up there. Apple genuine refurbs carry the full
1 year Apple warranty and are also eligible for AppleCare+.
