According to this Apple document, About AirPrint - Apple Support, your device is AirPrint compatible. Therefore go to the System/Printers & Scanners preference pane, Control (right) - click on your printer in the left hand pane and select Reset Printing System.
Then add your printer back with the AirPrint option.

The driverless AirPrint technology works with a network connection.
If the printer is connected via USB, drivers will be needed.
If so, do you have the latest drivers?
Drivers/software from the printer manufacturer may or may not add functionality.
At Epson’s website you can download Epson scan 2 and Epson scan utility
Have the Epson ET 2750 on Catalina 10.15.7 and AirPrint works fine. Did need to get the ICA files for Wireless scanning. Not sure if similar not same is for Big Sur
