Notes app constantly with the spinning wheel on Mac

I've been experiencing this lately where I start typing something on Notes and then the spinning wheel shows for like 6 or 7 seconds then I'm able to type again. The same happens sometimes when I go from one note to another.

It's really killing the workflow.

I have logged out iCloud, but no luck.

I used to have a lot of notes with images, but already removed those, so now all my notes have no images at all. I used to have folders with emojis, also removed them, hoping that it would help. No luck.

Anyone with any ideas?
