I do not want anyone to curate anything except me. Apple is taking control of our lives and forcing us into ways they think we should be working. I am on the verge of switching to windows. And I hate Windows!

You can't. You'll just have to learn to ignore it or use another photo organizer.
But you can tell Apple what you think and what new features added in Photos via Feedback - Photos - Apple
This is a feature. It's designed for those folks who really don't want to do that much organising. If that's not you the solution is simple: use another app to manage your photos, one that works the way you want. There are 20+ out there, and changing app is a lot less expensive than changing computer.
All curating does, is select a subset of images for display in the "days" view, for days that have too many images for that view, and create memories in the memories view. It doesn't move/delete or otherwise change your library in any way.
All images always appear in the all photos view.
Oh, and it does some image recognition - so you can for example type "birds" into the search box, and it will show you photos that it things contains birds. Not perfect, but incredibly useful I find.
Just ignore the memories view.
