How to stop iPhone 12 from starting when connecting to USB port?
I have my phone turned off at times. When I however plug it in to the USB port of my MBP it starts up. How does one stop it from booting up when connecting to the USB port?
You cannot change that behavior. You can turn the device off after to have it plugged in and off. But if already off, all iOS and iPadOS devices start up when plugged in.

No, it’s hard coded into firmware. You cannot change that behavior. No third party app can access core firmware functions and change them.
