Compatibility Getting in the Way:
Updating is not an option. This is because it not meet the hardware requirements for iOS13 and iOS14.
If Updating to 12.5.3:
A. Cellular Getting on the Way:
I see that cellular is enabled. So, unless you have an iPhone 12 with 5G, then updating is not an option, as of this post. See Here: Use an iPhone 12, that is using 5G in order to update over Cellular - User Tip
B. So, How To Update your iPhone:
With no success, and is compatible, try using a computer....
