I noticed my apple ID went back to a previous email. I don't understand why. My problem is that it won't let me change it back to my most recent email. It says it's not available. Any help would be appreciated. Thanks

Apple hasn’t published any guidance for using an address again. Normally, if your e-mail address was associated with an ID in any way, then it can't be reused with an Apple ID for approximately one year. I have also seen posts that stated Apple told them there was a 30 day waiting period before the address could be used again. You will need to get another e-mail address to use as your Apple ID or you can try waiting 30 days to see if that works.
How did you discover the email was now different? Was this because of an app update? If so, I suspect you actually have ended up making two AppleIDs. That would explain why the other email is unavailable since it is already used as a separate AppleID.
In a web browser, go to https://appleid.apple.com/ and try logging in with each of the two email addresses. If you can do so, then you have two separate AppleIDs.
Definitely change the password. It is never a good thing to not know the password for any online login ID. If you ever have to reset that device, without knowing the password, you would not be able to set it up again and use it.
On the iPad, I went from settings, then clicked on my name and noticed the email address under my name is now a previous email that I used years ago. I have no way of accessing that email. I clicked on "name, phone, email" and tried to 'edit' and this is where it said I couldn't use the email I most recently had been using. Should I sign out and try signing back in the most recent email I was using for my ID? I'm afraid to sign out, because then I won't be able to use the iPad at all. (hope that all makes sense)
Unfortunately I don't have the passwords for either of those IDs so I can't verify them on the website. It looks like I can change the password though, would that be advised? I clicked on "password & security" then "change password" and could enter a new one.
Yeah, exactly! Ugh! So if I change the password to this new but actually old email address that I'm using for my ID, will I be able to change that email address back to what it was just days ago? Or does it even matter? Is it possible for that email to change on its own? I know this sounds crazy but I swear the email address that is currently associated with my ID was not what was there days ago.
