As long as the company has proof of original retail purchase of the device, take it to Apple and they can help.
You may want to consider moving to a business managed deployment of devices so employees cannot use personal AppleIDs with company devices -> Business - IT - Apple

You will to take the device to Apple, with proof of purchase and see what they can do for you.
Then make a company policy, stating any terminated employees must give up said information when turning in a company device, or have said user do this What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support
