Shutdown via whatever means possible including Power Button. Disconnect all external drives and Restart in Safe Mode. It will do a Repair Disk, clear cache files and only load Apple Software, extensions and fonts - it will load slowly - Normal. This may or may not allow the update process to complete. If Yes, the Setup Assist of Big Sur will be presented.
