IOS 14.6 and Watch
Since updating to IOS 14.6, Siri no longer announces incoming texts when I have airpods pro on and my watch no longer vibrates when I get a text.

Try if toggling those features OFF and then back ON will bring them back to life. I just tested this and it works fine on mine.
For Siri, note that it needs to be turned on in two places under there, and your iPhone is locked with dark screen.
Go to Settings > Notifications > Announce Messages with Siri and make sure Announce Messages with Siri is turned on. Then tap Messages and make sure that Announce Messages with Siri is turned on there too.
