Microphone icon on watch

Welcome to Apple Support Communities! We understand

"With watchOS 7, the microphone icon means your Apple Watch mic is listening. It appears when you're talking to Siri, recording a voice memo, or using any app that activates the microphone, such as Handwashing or Walkie-Talkie."

Try closing all of your apps to see if the microphone icon disappears. When the app is in the background, push in the side button find the app you want to close and swipe left.

This clears it from the list.
