I have insurance through T-Mobile but they are not covering much o want to cancel it and get Applecare+ but T-Mobile is telling me if I cancel my insurance I wouldn’t be able to get apple care at all after

AppleCare+ can only be purchased within 60 days of purchase of a new device.
Technically, if in the US and still within the first year since bought you can call Apple (not chat or do it yourself online) to ask it be added. There may be some additional restrictions, too.
Yes, written public policy shows different, but they have confirmed at last falls release there are additional options after the 60 days. OP just needs to call and check if they qualify.
AppleCare+ is available at device purchase and within 60 days from purchase. AppleCare+ is not available after 60 days.
