How can I purchase a version of MainStage that runs on High Sierra?

It is kind of possible... but there are a few hoops to jump through. You can only purchase MainStage/Logic etc on a Mac running Catalina or higher. Perhaps you can use a friend's Mac, or maybe one in a store to make the purchase? Simply log in to the AppStore with your ID, buy, then log out again.
You can then download the latest version that will run on your Mac.

You can’t. I’d never normally recommend this but you might need to use Google to find an “unauthorised” version. I don’t support this approach but I also don’t agree with Apple’s tight restrictions either.
I have not done this yet, but according to Apple support, this is how you do it.
I had to do this on a Brand new M1 Macbook Pro, as 3.5.x kept crashing when loading my patch file. This however, works fine on my Mac running Catalina.
