Trying to re-pair my watch and the viewfinder won’t display when I go to pair. I have reset both devices and deleted and reinstalled the watch app. HELP

Try hard resetting the watch as well:
Press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
Tried that multiple times
OK, then try restart of the iPhone as well - and perhaps reinstalling the Watch app as well. See here:
