When transferring content between iPhones, does this keep the app versions on the older phone or will the process update any out-of-date applications once placed on the new device??
In other words, I turned off the auto-app updates to avoid updating 1 specific app. I want a new iPhone, but don't want this to result in the application updating. Does anyone know how this works for app versions? Thanks :)

Yes. Apps themselves are not transferred regardless of how you migrate the data. They are set for download from the App Store.
When migration is complete, you'll see the App icons be a bit darker while they download.
The transfer does not actually transfer apps directly. What it does is any apps installed on the old device are set to be downloaded on the new one from the App Store. That means you'll get the newest available version of the app from the App Store on the new device.
