I’m looking to delete certain mailboxes you know like blank blank at blank the whole thing and I just got the iPad and I put the newest software on and you know everything is up-to-date except it still has mailboxes and I want to delete how do I do it

Your niece should have performed the steps described in What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support before you started using it, so that you would have a clean device to start with. That article also outlines steps she can take now to help detach the iPad from her accounts.
