I am running Big Sur, newest update and am not seeing anywhere in Notes preferences where I can change the default Grey to Black as I can barely see the notes. Yes, I know how to change it manually but what good is that when I start a new note and there is the Grey all over again. Sometimes it even manages to change itself back to Grey on its own.
This has been brought up in the past with no solution.

First, start up in safe mode. This helps to perform a basic check of your startup disk, deletes some system caches and more. Once you're in safe mode, please restart your Mac as normal and see if you continue to experience the same behavior.
You may also want to test this issue in another user account on your Mac: Set up users, guests, and groups on Mac.
