How do I cancel a YouTube premium subscription that’s connected to my son’s apple account.

You have to be signed into iTunes/Apple Music with his Apple ID and then follow the procedure outlined here: How to cancel a subscription from Apple - Apple Support

However if you are signed in there with your own ID and you sign out and sign in with his, you won't be able to sign back in with yours for 90 days.
