My iPhone is stuck in update 12.5.3 and it won’t let me update it

An unit running 12.5.3 isn't capable of 13 or above.

The iPhone 6Plus can only be updated to iOS 12.x.x.x. It does not have the components needed to run newer software.
Correct, as it is not compatible with iOS 13 or 14.
