I have a MacBook Pro with Safari set as my default browser. After updating the operating system to the latest version (Catalina 10.15.7.), Safari no longer launches, when the computer is turned on. Any thoughts on why and what I can do to fix it?

It sounds like you want Safari to launch when you login to your user account.
If that is the case, then control-click the Safari icon in the dock and select Options >Open at Login.
I'm not sure why that would have changed after updating your OS, but if that's all that has happened, you're blessed. 🙂

What happens when click/tap on Safari from the dock?
Please see in > System Preferences… then click "General"
Change General preferences on Mac - Apple Support
To set/check Safari as Default web browser.

I've done that and wouldn't you know it, Safari was NOT ticket as "Open at LogIn." Let's see what happens, when I next log on. Thank you - and so far, touch wood, no other problems....
