If I have an iPad Pro with 256GB would I be able to go to apple and switch it for the 512GB and pay the remaining amount?
Depends. If its been less than 14 days since you bought it, you can return it for a full refund and buy whatever you want.
If its been more than 14 days since you bought it, and it's a current model, then you won't be able to Trade it in as current models are not accepted for trade in. You would then need to sell it privately and use the money to buy the one you want.
If its a model from a previous year, then you may be able to trade it in for some value, but will in most cases be less than what you might get if you sell it privately.
