Mac app (Preview, Maps, etc.) unreliable

Ever since updating to Big Sur, Preview and especially Maps is slow and unreliable. They regularly either run so slow as to be impossible to use, or freeze and give the loading wheel until I force quit them. Anyone else having issues with this, or any suggested fixes? I'm on a 16" 2019 MBP with the 2.6GHz i7 and 16gb of RAM, so not sure why it doesn't seem to be able to run a maps app or glorified .pdf viewer.
