When i turned on the iMac, I had two users that were there via system preferences, one was a guest and the other had some unintelligible labelling. I was able to remove that one but the guest account I cannot remove as the minus is greyed out. Ideas welcome.

Click the lock in the lower left and enter your admin password to unlock the Users & Groups preferences panel.
Click the Guest User account icon on the left.
Uncheck "Allow guests to login to this computer."

You can't delete the Guest User. You can only disable it.
